How she makes it

Sun. Oil. Wait.

Sun

After the salt has drawn the water, the bowls go out. A thin cloth. Light for a few days. She does not stir them more than they need.

Oil

Mustard oil, heated until it stills, then cooled. Poured to the brim so nothing of the fruit is left to the air.

Wait

The jar sits. The rai blooms. She will tell you when it is ready — not the calendar.

Order

Write to her. She will say if the batch has a jar for you.
